From the moment it hits your palate, you taste a wonderful, vibrant cherry freshness. It's a proper zingy start that awakens the senses without being overly sweet. This isn't a harsh or aggressive acidity; it adds a delightful complexity and character to every sip.

As the flavours develop, you'll discover the comforting depth of rich caramel, perfectly balanced by a subtle yet alluring hint of toasted coconut. These harmonious notes blend seamlessly, creating a truly memorable flavour profile. And the finish? Smashing. You'll be left with a refreshingly clean aftertaste that lingers long enough to leave you craving another delightful moment.

 

The Process

This lot is washed in line with Colombian coffee processing traditions. Ripe cherries are de-pulped and then dry fermented for 60 hours, thoroughly washed in the fermentation tank, and then dried for 15 days in a marquesina (a specialised covered drying method common in Colombia, essentially a greenhouse-marquee).
