About the Components

Our house espresso blend changes components seasonally. The goal is to make an espresso that is a building block for a wonderful milk based beverage, as well as interesting and complex on its own.

Brazil Santa RosaCoffee producer Petrônio Otávio Borges de Sousa operates Fazenda Santa Rosa in Cambuquira, Minas Gerais, in the Sul de Minas region of Brazil. Petrônio was born to a coffee producing family, with history stretching back to his grandfather who set the standard of the family’s devotion to agriculture. This lot of Yellow Bourbon coffee underwent Natural processing, and provides the nutty base notes for out house blend.

Peru APRYSA – A cooperative based in the Rodríguez de Mendoza province, APRYSA was founded in 2014 by Katsuhiko, a Japanese man who moved to Peru 15 years ago when he met his Peruvian wife. They are one of the smallest cooperatives in the area, but they like it that way and intentionally keep it so. This makes it feel more like a family enterprise and their focus on quality really help them to improve the lives of those involved. The varietals are many, including Catimor, Typica, and Mundo Novo, all being processed with the washed method. APRYSA adds some delicate notes, and a touch of acidity to balance out our Dark Horse blend.
