This coffee comes from the Chuave District in Papua New Guinea's Chimbu Province. It has been roasted to showcase notes of dried cranberry, hazelnut, and grapefruit, resulting in a vibrant cup with layers of sweetness, gentle nuttiness, and bright citrus character. Coffee in this region is grown predominantly by smallholder farmers in what are locally known as "gardens" - small plots of land that can range from just a handful of coffee trees to around three hectares in size. These family-run farms make up the vast majority of Papua New Guinea's coffee production, while larger, traditional plantations account for less than 20% of the country's total output. This smallholder-driven approach helps preserve traditional farming practices and contributes to the distinctive character of coffees from the region.
About the Region
Located in the highlands of Papua New Guinea, Chuave District sits within Chimbu Province at elevations well suited to coffee cultivation. The region's cool temperatures, abundant rainfall, and fertile soils provide ideal growing conditions, helping produce coffees with vibrant acidity, pronounced sweetness, and complex flavour profiles. Coffee farming is deeply embedded in the local culture and economy, with the majority of production coming from smallholder farmers who carefully tend their coffee alongside other crops on family-owned plots.
About the Process
Once harvested, the coffee cherries are pulped and dry fermented for around 24 hours in wooden or plastic boxes. After fermentation, the coffee is thoroughly washed and then dried on traditional "sails" – raised tarpaulin drying beds that allow for consistent drying and careful quality control. The dried parchment coffee is sold to local collectors before being delivered to Kongo's renovated dry mill. Here, each lot is cupped, selected, processed, and hand-sorted where necessary to ensure only the highest quality coffee is prepared for export. This lot also contains the Arusha varietal, an intriguing coffee variety believed to be from the Typica lineage. While Arusha is found in both Tanzania and Papua New Guinea, relatively little is known about its exact origins, adding an element of mystery to a variety prized for its quality and cup character.
