About the Region
Juan rebuilt his farm after the devastation of Hurricane Mitch, focusing on Parainema and Lempira varieties cultivated at 1,500 metres above sea level.
About the Process
His washed process includes 16 hours of dry fermentation, meticulous washing, and careful drying under solar domes and on patios for up to 15 days.
